Posho, a staple food in the Ugandan diet, is made from ground maize (corn) and often called 'maize flour.' It is similar to corn grits in the U.S. When boiled thinly, it makes porridge -- a hot drink for breakfast. When cooked more solid, it is a common base for meals, for example covered with cooked beans (like pinto beans). Children usually eat posho for school lunches. Posho is very filling and nutritious, especially when combined with beans.
